Blacker Hall Chicken Parcels with Sweet Tomatoes

Preparation time: 5 minutes

Cooking time: 35 minutes

2 Blacker Hall Chicken Parcels
2 medium - large onions
1 small leek
100ml boiling water
250g sweet cherry tomatoes
freshly ground black pepper
pinch of salt
Olive oil

Pre-heat your oven to 190°C.
Peel and chop your onions into quarters and then halve again.
Finely chop the best part of the leek and spread these & the
onions on the bottom of a heavy based roasting dish with a little olive oil.
Chop your cherry tomatoes in half and place on top of the
onions & leek.
Season with freshly ground black pepper & a little salt.
Pour in the water and set the chicken parcels on top.
Cover the dish and cook for 35 mins.
Remove the lid and cook for a further 5 mins to lightly crisp the skin.

Serve with boiled new potatoes and steamed broccoli.
